Nella \u2018nuova\u2019\u00a0<strong>Galleria Alberto Sordi<\/strong>, fresca di restyling, arriva una delle istituzioni milanesi, non solo a livello gastronomico.\u00a0<strong>Stendhal Milano <\/strong>\u00e8 un luogo che custodisce la cultura meneghina con piatti della tradizione e un&#8217;eleganza moderna. Una location d\u2019eccellenza che segna l&#8217;arrivo della vera cucina milanese a Roma, firmata dallo chef <strong>Edoardo Ferrera<\/strong>. Il focus \u00e8 la milanesit\u00e0: dal risotto giallo all\u2019iconica cotoletta, ma non mancano gli omaggi alla capitale, come il \u2018Meneghino Stendhal\u2019, il suppl\u00ec \u2018alla milanese\u2019 con riso giallo, ossobuco e gremolada fondente. <br>La vera cultura gastronomica milanese approda da Brera a Roma, in un locale di due piani, non solo piatti milanesi, aperto dall&#8217;aperitivo, al pranzo, al dopocena<strong>, <\/strong><em>\u00a0<\/em>racconta <strong>Marcello Forti <\/strong> proprietario e founder di Stendhal Milano. L\u2019apertura a Brera nel 1988 da un\u2019idea di Italo Manca, uno degli ultimi dandy milanesi. Un locale dalle atmosfere retr\u00f2, in linea con la scelta del nome: un omaggio al celebre scrittore francese che amava follemente Milano tanto da definirla \u2018<em>beaut\u00e8 parfaite\u2019<\/em> (bellezza perfetta) e scegliere la cotoletta come suo piatto preferito. Negli anni 2000 arriva al timone della propriet\u00e0 la famiglia Forti, che eredita l\u2019importante storia rendendo tutto pi\u00f9 \u2018contemporaneo\u2019, dagli interni all\u2019offerta. I tavoli liberty in marmo, la boiserie verde le pubblicit\u00e0 retr\u00f2 e le sedie Thonet convivono con una mise en place pi\u00f9 moderne e con un mood fortemente contemporaneo.\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I piatti sacri della tradizione convivono con proposte pi\u00f9 innovative, come la bresaola di Wagyu Italiano (prodotta a Lodi) e i fiori di zucca saltati in padella ripieni di ricotta e pesto alla genovese, spiega Marcello Forti. Immancabili il riso giallo Milano, quello al salto con fonduta di Silter e la Milanese di vitello alta (che pu\u00f2 essere servita anche scaglie di tartufo sopra).<br>Siamo nel grande \u2018salotto\u2019 di Roma, uno dei posti pi\u00f9 affascinanti: la Galleria Alberto Sordi. Edificio storico inaugurato nel 1922, con la sua inconfondibile eleganza architettonica liberty, in Piazza Colonna, sua via del Corso, di fronte a Palazzo Chigi, a due passi da Fontana di Trevi.<br>Il locale si sviluppa su due piani: all\u2019ingresso un grande bancone scenografico con inserti in ottone, con una bellissima bottigliera alle spalle e un banco gastronomia a vista che ospita grandi eccellenze italiane. Qui nella sala al piano terra ci sono circa 25 sedute ai tavoli e 5 sugli sgabelli al bancone, mentre nella sala al piano superiore ci sono circa 22 coperti posizionati nei tavoli di fronte alla cucina a vista.
